Winter’s coming usually along with a few kilos, so to keep them away and it’s definitely soup time and here is a new  autumn recipe that everyone is going crazy over!  If you don’t have escarole (endive), any green will do that works for your chemistry!
All weight gain and health issues start with inflammation so here’s a great lunch recipe.  Not so much for dinner as soup at dinner time can cause digestive issues for some.
As you know I’m nuts about digestive health and eating to suit your own body chemistry is king!  This soup is light and friendly for your digestive system.
Add a salad of baby cos with some carrot, avocado, sunflower seeds and lime agave dressing and you have the perfect winter lunch menu.
Basil Escarole Soup
• 1 large white onion, fine diced
• 1/8th cup dried basil
• 1/2 tsp pink himalayan sea salt
• 1 tsp black pepper
• 1/4 cup evo
• 1 litre low sodium vegetable stock
• 1 litre water
• 1 tsp agave or honey
• 1 kg carrots, chopped
• 8 cups zucchini pasta or 8 cups chopped zucchini, small
• 2 heads escarole (endive), chopped
• lime or lemon juice to taste
In a large soup pot saute onion and basil in evo.
Add sea salt and black pepper and let simmer for 20 minutes.
Add liquids, carrots and zucchini and let simmer for 20 minutes.
Add chopped escarole and let simmer an additional 10 minutes.  Top with lemon or lime juice.
Lime Agave Dressing
¼ cup freshly squeezed lime juice
¼ cup extra virgin olive oil
2 tbsp water
1 tbsp agave nectar
1 crushed garlic clove
